Made this healthy Minestrone from http://www.eatingwell.com/ and it's a keeper. Made a few changes including using fresh vegetables instead of frozen. Tiny star pasta instead of macaroni. Fresh kale instead of endive. Red pepper flakes to spice it up a bit and a
parmesan cheese rind. Definitely worth a try!
