Sweet potatoes with pecans and goat cheese from Smittenkitchen.com
Once again http://smittenkitchen.com/ have created a culinary masterpiece. This is soo good. The "salsas" ingredients include pecans, cranberries, celery, goat cheese, shallots, dijon mustard, fresh parsley And red wine vinegar. How can it be bad? You got to try it! I followed the recipe pretty much as it was written. I did cut the sweet potatoes thinner but that's just a matter of preference. The article points out many of the ingredients can be substituted for ingredients you like. So go for it.

And now another recipe review on my quest to find new and interesting culinary undertakings.
Today we are reviewing a recipe from Kevin in Toronto who provided this awesome recipe on his blog http://closetcooking.blogspot.com/
This is a wonderful change from the typical tomato based pizzas. A nice combination of flavors from the Currie, ginger, garlic butternut squash and cheeses. You got to try it! Just click the pizza to see the recipe.
I was reading an article about the best way to reheat pizza. And its not a toaster oven or your microwave. Take a skillet add a little oil and put the pizza slice in it. Be sure to use a lid so the toppings get hot. Its like a little mini oven for your pizza. So I tried it the fist time with this pizza and people...It really works. The pizza is crunchy and hot. Not soggy! Some of the cheese and toppings cook a little more in the bottom of the skillet which makes the whole pizza experience even better. Best reheated pie I ever had.

Broiled Tilapia Parmesan and Zucchini with Almonds

Mushroom and pepper pizzini from BBC Recipes
This recipe has a special meaning for me. It's great because it's fast and simple. Different from a regular pizza because there's no sauce, no mozzarella, no Parmesan and no yeast or sugar in the dough. So the dough is thinner and you don't have to worry about waiting for your yeast to rise. I use honey instead of sugar in my regular pizza dough.
I don't happen to have a blow torch setting around the house so instead of the blow torch method they recommended I just baked the dough in the oven for 10 to 15 minutes added the fried vegetables and Cheddar and Colby cheese then popped it back in the oven to finish it off. I also used onions with the red peppers and mushrooms. I see allot of potential for other toppings here. Good recipe from the BBC. I give it a two thumbs up.

Chicken and Rice Casserole from Simplyrecipes.com and Aunt Millie's Broccoli Casserole from Allrecipes.com.
It's time for another Lomaxx recipe review. This time a Chicken/Rice and a Broccoli /Cheese casserole. Both dishes complement themselves well with one another. One change I made with the chicken rice casserole was to use chicken breasts instead of thighs because I'm not crazy about dark meat. I added the herbs on top of the casserole instead of in with the sour cream sauce to give the dish More color. I was intrigued by the broccoli casserole because it used cream of mushroom soup and American cheese in it which is not what I would normally use. The results were surprisingly good! Both of these are keepers in my book.
